From a chemical point of view, wine and spirits are very complex mixtures. According to the official prescriptions, many of their components should be precisely controlled to provide the required level of safety for consumers. Besides chemical control of all parts of the production chain – from vine to wine and from soil to oak barrel – is of utmost importance in order for manufacturers to make the right decisions and to answer questions like: when to start harvest, which must batch should be used immediately and which should be reserved, when to start malolactic fermentation, how the maturation process occurs and which oak types should be used. Finally, the quality of the resulting product must be confirmed not only by a renowned taster, but also by a precise chemical analysis.
Lumex Instruments has developed several analytical protocols to provide typical analyses of wine, wine materials and spirits at all stages of manufacture. These protocols can be realized on Lumex Capel® capillary electrophoresis systems. We propose to determine the following important compounds:
- Organic acids
- Inorganic anions and some organic acids
- Inorganic cations, biogenic amines and some amino acids
- Aromatic aldehydes in brandy and cognacs
- Sugars
These protocols are proposed in the form of Standard Operation Protocols, which means that every step is clearly stated in the text in detail and the entire procedure can be internally or externally validated, as has been done in many European countries.
